中華飲食文化對世界的影響

The Influence of Chinese Culinary Culture on the World

摘要


中華飲食文化源遠流長,對亞洲各米食民族的影響彰明可見,東北亞的日本、韓國,東南亞泰、緬、印度支那半島諸國,以至馬來半島,新加坡、印尼、菲律賓等莫不深受中國飲食文化影響。近世中華飲食文化隨中國人移居世界各地日多,影響更廣。近年中國菜地位在歐美等地大為提高,吃烹調精美中國菜成為時尚,世界各大都會的廚師吸取中菜烹調技法者日多。在世界飲食史上佔重要一頁的法國新派烹調直接、間接受中華飲食文化影響的跡象至為明顯。香港,長久以來是中西文化薈萃的大熔爐。近年旅遊業發達,觀光酒店大增,歐陸廚師大量流入,他們對中華烹調藝術激賞之餘,往往攝取菁華,加以變化溶入西餐,形成東西交流的新風格。在國際烹調大賽中,這種新風格備受注目,對今後西餐潮流肯定會有深遠的影響。

Chinese culinary culture has an extensive history, and its influence on the rice-eating peoples of Asia is readily apparent. Japan, Korea, Thailand, Burma and the countries of Indochina, the Malaysian peninsula, Singapore, Indonesia and the Phillipines have all been deeply affected by the culinary culture of China. With the migration of Chinese people to points all over the globe, the influence of Chinese culinary culture has spread world-wide. The position of Chinese cuisine in Western countries has risen considerably, and exquisitely prepared Chinese dishes are the current trend in international culinary circles. Increasing numbers of chefs in major cities the world over are seeking knowledge of Chinese food preparation methods. Signs of both the direct and indirect influence Chinese culinary cuIture has had on the historically important Nouvelle Cuisine are obvious. Hong Kong has long been a flourishing melting pot for the cultures of East and West. A highly developed travel industry has brought with it a large increase in the number of tourist hotels and an inflow of continental European chefs. These master-chefs come not just to appreciate Chinese cuisine, but to absorb its essence and incorporate it into their western dishes. This new blend of east and west has gained much notice at major international cuisine competitions and is having a profound effect on the direction of western culinary art.
