有鑒於HACCP系統在食品衛生上的重要性及行政院衛生署食品藥物管理局自97年公告觀光旅館之中式餐飲業別需強制實施HACCP系統,因此本研究以觀光旅館餐飲從業人員對實施HACCP系統之認知、意願與困難度,以30間觀光旅館共計300位餐飲從業人員為問卷調查對象,採描述統計分析、獨立樣本t檢定、單因子變異數分析、皮爾森積差相關、迴歸分析等統計方式加以分析。 研究結果指出:(1)對於推動HACCP系統之知識,餐飲從業人員具有高度正確性。(2)餐飲從業人員對於推動HACCP系統的困難度抱持可接受的範圍內。(3)餐飲從業人員具有高度推動HACCP系統之意願。(4)基層員工與女性餐飲從業人員對實施HACCP系統12項步驟困難度高。(5)國際觀光旅館附設中餐廳,實施HACCP系統比其他類型餐廳之困難度低。(6)有較高正確認知之餐飲從業人員,其推動HACCP系統之意願較高。以上結論以提供政府單位、觀光旅館業者及在推動HACCP系統之參考。
Owing to the importance of the HACCP system in food hygiene and the Department of Health Food and Drug Administration announcement since April 2008, tourist hotels in the style of the chinese restaurant need to implementation of the HACCP system. In this study of food and beverage department employee’s cognition ,willingness and difficulties of the implementing HACCP system in the tourist hotels. Questionnaire survey of a total of 300 of food and beverage department employee in 30 tourist hotels. A descriptive statistical analysis, independent samples t-test, ANOVA, Pearson correlation and regression analysis to analyze. Research results indicate that: (1) For the promotion of knowledge of HACCP systems, food and beverage department employee’s are highly correct. (2) Promoting the HACCP system for food and beverage professionals difficulty hold within the acceptable range. (3) Food and beverage department employee’s with a high degree of willingness to promote the HACCP system. (4) Level employees and female employees in the implementation of the HACCP system catering 12 steps difficulty is high. (5) International tourist hotel has a Chinese restaurant, implementation of HACCP systems difficult than other types of restaurants are low. (6) Have a higher correct understanding of food and beverage department employee’s and its willingness to promote the HACCP system is higher. These conclusions in order to provide government agencies, tourist hotel industry and in promoting the HACCP system reference.
