To increase the additional values for agricultural products, the process of post-harvest is one of the most important works. Indian jujube is a newly risen fruit industry. The relative processes of post-harvest for Indian jujube include cleaning, grading, packing and preservation process. For the time being, such works are handled by labor power. In future, it is an inexorable trend to use post-harvest processing machine for saving labors, promoting work efficiency and improving the problem of sanitation. Because it was short of grading machine suitable for use in sorting Indian jujube, this study firstly investigated its basic physical properties and then established the physical property's indices. Those data can provide the fundamental information to design and develop the grading machine. The physical properties of Indian jujube include the shapes, sizes and weights, slanting and rolling angles, coefficients of friction and the size attribution ratio.
