Enhancement of Physical Stamina upon the Consumption of Chicken Protein Hydrolysates with Different Molecular Weight Distribution

Chicken is an excellent source of protein and chicken products are consumed traditionally to improve health. After enzymatic hydrolysis, the ability of chicken protein hydrolysates to enhance exercise performance were evaluated through an experimental model by initiating a state of energy exhaustion with fasting. The hydrolysis process did not denotatively alter the total amino acids levels of protein samples. As hydrolysis time increased (1-5 h), large amounts of molecules in the water soluble protein hydrolysates (72.5- 88.1%) were found to have molecular weight below 1,000 Da. The consumption of hydrolyzed samples, especially hydrolysate II, would result in faster increase in blood glucose level. The peak blood glucose concentration of animals fed hydrolysate II could be attained 30 min earlier than the other protein samples. All protein samples were able to prolong swimming time by 45-134%, among which hydrolysate II was the most effective sample to generate energy and enhance swimming endurance, showing its potential in improving physical stamina and alleviating fatigue.
