飲食文化之空間透視

A Spatial Perspective of Dietary Culture

摘要


文化,源自易經之「人文化成」一語。隱含「人」與「環境」為文化形成之兩大基本元素,這亦是地理學研究之兩大基本元素。人依其對生活環境識覺所產生之「價值意向」而創造的理想之生活條件,就是文化。「飲食」篇人類生活的最重要行為,「飲食文化」應為文化研究之最重要個案,各地有不相同的飲食文化,固然反映出世界上有區域差異之自然環境特性,更重要的是反映出各地的「人」有「價值觀」之差異。筆者的專長為地理學,以「空間概念」為研究主題之一,本文之目的,希望藉著「飲食文化之空間特性」,透視「文化內涵」之深層意義,換言之,欲找出「人的文化價值觀」之所在。所謂飲食文化之空間特性,將以「食物之烹調特式」,「宴桌之佈局」,「廚師與食客」及「飲食時之動態」四項目作為研討之指標。這是對「飲食文化」的一種新的思考方式,祈盼各界指教與批評,俾能在研究上有所助益,先此致謝。

Culture is the integrated pattern of human behavior which is depending upon how man is perceiving and evaluating his living environment. Thus, man and environment are two basic elements and variables in the development of culture. Dietary is one of the most important behavior in the human life. Dietary culture shall be a good indication for understanding men's concept of value toward his environment. In this article, the author intends to present and discuss the spatial characteristics of dietary cultures in order to discover the differentiation of Chinese and Western cultures. The so-called spatial characteristics of dietary cultures including three main topics: (1)Table Settling; (2)The Form of Dishes; (3)The Attitudes as a Cook or Diner and (4)The Dining Process. This is a new approach of geographic thinking. The author wishes to receive sincere critique as well as suggestion. All ranges of feed-back regarding this study are thankfully welcome.
