品德教育對高職餐飲科學生專業態度影響之研究- 高雄地區為例

The Effect of Ethical Education on the Food & Beverage Department Students’ Professional Attitude: A Case Study of Vocational High School in Kaohsiung Area

摘要

本研究旨在探討品德教育課程對高職餐飲科學生餐飲專業能力之影響及對不同背景變項的高職餐飲科學生餐飲專業能力的影響。本研究採準實驗法，實驗組有608人與控制組有895人為研究對象，「餐飲科專業能力量表」為研究工具，分成「個人發展與多元接納」與「專業素養與社會公義」二構面，以ｔ考驗、單因子變異數分析進行資料分析處理。
本研究得到下列研究結果：一、餐飲科學生接受品德教育正式課程對其專業能力發展情形有所差異。二、品德教育實施對不同年級、學制、性別以及有無工讀經驗的餐飲科學生其整體專業能力發展有所差異。

The main purpose of this study was to explore the The effect of F&B department students’ professional attitude through ethial education and try to analyze the difference of morality education effects between students who have different background. The experiment use “F&B professional ability survey” as tool, which two parts “personal develop and accept ”、” professional accomplishments and society justice”. Totally 1503 subject were investigated, and frequency distribution, t-test, one-way ANOVA were used for the data analysis.
The result from this study were as follow:
(1) there were significant different in educational system
(2) there were significant different in the variables of gender, working experience, educational system
