1980年代以降,東南亞國家女性透過通婚方式移居台灣,使得臺灣新移民人數不斷攀升;這些移民女性不僅為臺灣社會孕育下一代,更帶來她們原生國的飲食與文化。在飲食上,移民女性於進入台灣社會後,雖須經歷適應台灣口味的不適應階段;然而在此一過渡時期之後,屬於國際移民的這一群女性,似乎不只被動地融入於台灣飲食文化,從中更可隱約窺見,其為臺灣傳統飲食文化注入新元素。 本研究藉由二十一位移民女性與五位台灣家人受訪者,來瞭解這一群跨文化疆界的東南亞移民女性在飲食習慣上的轉變。從中看到她們在結婚之初,可能受制於家庭結構與主從次序的影響,因而隱藏對於故鄉味的想念並以夫家口味為主;但隨著時間的推進,可發現她們並不僅只是無聲的適應者,因為在適應台灣飲食的同時,她們也會適時運用不同策略,來滿足自身的「食物戀」,並在台灣家庭飲食中帶入家鄉味,讓夫家的飲食料理揉合異國風味,甚至影響家庭成員對於食物的偏好,最後在建立屬於自己的在地人際網絡後,其飲食也隨之鑲嵌於此。
Starting from the 1980s, the marriage migrants from Southeast Asia is changing the population structure of Taiwan. These females not only act as reproduction tools for Taiwan society, but also introduce their cuisine and culture. In terms of cuisine, after a difficult adaptation and transition period, the migrants seem not to be passively accommodated to Taiwanese cuisine, vaguely but certainly, they add a totally new flavor into it. This study makes every attempt to understand cross-culture dietary change for the above-mentioned immigrants by interviewing 21 of them, who live in five families. It is apparent that at the early stage of marriage, these females choose to conceal their dietary habit in order to accommodate to their husbands’ family. However, they all manage to gradually intermixing Taiwanese cuisine with that of their own Southeast Asian one. The strategies they adopt are so successful that those immigrants both fulfill their dietary desire and finally even influence the family’s dietary preference. Ultimately, all subjects establish their own inter-personal network and blend their foodway into local society seamlessly.
