從諺語看台灣的傳統飲食文化

Taiwan's Traditional Drinking- Eating Culture as Seen from Taiwanese Proverbs

摘要


諺語是語言的精華,它係經過社會大眾千錘百鍊之後方得以形成,因而每則俚言諺語都代表了它特有的社會意義。俗話說:「國以民為本,民以食為天。」古聖人也告訴我們:「食、色,性也。」因此每一種語言中都有不少有關飲食方面的諺語,它們均深刻地反映出該社會在飲食文化的特徵。本文即以台灣諺語為素材,透過這些素材來探討台灣傳統社會的飲食價值觀、烹調方法、美食與當令之食物、飲食與醫藥保健、節日禮俗與飲食、飲食禮儀與禁忌,以期對台灣的傳統飲食文化能建構出一個大致的輪廓。

Proverbs, the essence of language, have been tempered and ground through time by the public. Therefore, every proverb carries specific social meaning. As the saying goes, "People is the foundation of a nation, and foodstuff is indispensable to the people." An ancient sage also tells us, "Eating and sex are all part of human nature." As a result, proverbs pertaining to eating and drinking are found in every language, and they reflect the characteristic of the drinking-eating culture of that society. This article presents Taiwanese proverbs which reflect Taiwan's traditional drinking-eating habits and values, Taiwanese view of the relationship between food and health, their table manners and taboos, festival rites and food, and also Taiwan's culinary art and treasures, and the food in season. By doing this, a general profile of Taiwan's traditional drinking-eating culture is given.
